31st Annual Waffle Breakfast Clermont College tradition

UC Clermont College’s Biology Department hosted its 31st Annual Waffle Breakfast on Friday, April 7, 2006. More than 170 students, faculty and staff enjoyed the yeast-raised cornmeal waffles served with home made syrup.

The UC Clermont tradition of maple sugaring has been a Winter Biology Lab activity since 1975 when David Fankhauser introduced it as a component of his innovative Biology Lab program.  This year, the sap began to flow January 23, “one of the earliest flows in our 31 years,” said Fankhauser.

The flow was over by March 1.  “We had one of the largest single day flows ever on February 15 when we got almost 17 gallons of sap!” said Fankhauser. Biology students collected the sap daily and “the Doc” boiled it down until it was reduced to about 1/40th its original volume.  (It is boiled in open pans for about six hours until it has reached syrup consistency, and then removed from the fire promptly before it burns.)  Three gallons of syrup were yielded from 122 gallons of sap.
