VIDEO: College Cookout Kicks Off a New Tradition

 Thousands of faculty, staff, students and administrators celebrated the mild fall weather on Sept. 28 at the ninth-annual barbecue hosted by the UC College of Education, Criminal Justice, and Human Services. CECH Dean Lawrence J. Johnson is a fixture behind the grill at this event, which required seven gallons of the dean’s own barbecue sauce recipe.

 Associate Dean Regina Sapona announced the college’s first recipient of the $500 Emma Carter-Collins Memorial Scholarship, named in memory of the dean’s longtime assistant who died of cancer last fall.

Khielah Yisrael of Golf Manor, a junior criminal justice major, said receiving the scholarship was a great honor. Her mother, Amuna, a business manager in the Division of Teacher Education, attended Hughes High School with Emma Carter-Collins, so as a student, Khielah also came to know and work with her mother’s longtime friend.

Carter-Collins son, Derrick Collins, and her husband, Jeffery Collins, represented Emma’s family at the scholarship presentation.

Amuna Yisrael says her daughter Khielah has been a student worker at UC since she was just 14 years old. She got her start as a high school student attending UC’s Upward Bound program.

Planning for the annual CECH cookout takes an entire year and begins the day after the traditional fall event, according to Nelson Vincent, associate dean. Here’s a sampling of what was served up last Friday:

• 350 pounds of ribs
• 75 pounds of chicken
• 1,000 hot dogs
• 1,000 (approximately 200 pounds) hamburger patties
• 2,250 buns
• Potato salad that had 150 pounds of potatoes, 10 pounds of onions and 10 stalks of celery
• 20 gallons of coleslaw
• 100 pounds of pasta salad

Desserts included five sheet cakes from the College of Law, which held its 175th anniversary celebration later in the afternoon.
